The fertile soil in the Ecuadorian Andes is great for agriculture. The Andes mountain range is the garden of the country, always providing grains, fresh vegetables, and other legumes. The food consists of a lot of pork, chicken, white rice, beans, and potatoes. The soups are perhaps the most representative dish of the Andes, with one being the queen of them all: the traditional “locro de papa”, a soup made of potatoes. Gathering around the table for lunch is a tradition and locro de papa is the star. The soup is served hot, and is garnished with sliced avocado, mild-flavored queso fresco – fresh cheese – which is similar in texture to Mozarella, but does not melt.
