The Amazon rainforest, or Oriente as it is known locally, is certainly a big supplier of not only oxygen for the planet but also many medicinal plants, spices, animals, and exotic fruits. It also provides freshwater fish, which is the main ingredient of one of the favorite dishes among local indigenous people and residents, the Maito. Maito consists of fresh fish and vegetables wrapped in Bijao leaves and cooked over coals. This dish is served with plantain or yucca (cassava), rice, and chopped onions and tomatoes. A typical dish not to miss while you are visiting the Ecuadorian Amazon rainforest.
